Black rice takes a little while to cook, so I like making a little extra to have leftovers for a day or two. Black rice is a nice breakfast cereal too. Try it with maple syrup, it’s delicious. Did you know that it’s also called Forbidden Rice? It’s because it’s so nutritious that it was once forbidden to eat for everyone except the Emperor of China!For this recipe you’ll need.Black RiceCashew NutsYellow OnionField Roast Mexican Chipotle SausageIf you don’t have leftover black rice, make some, allow for at least 30-40 minutes cooking time.Once the rice is done, begin by sautéing the onion until it’s crispy. Once that’s done, add just a little water and your cashew nuts, then cook until the cashews have softened a bit. You only need a few minutes, then you can pour out the water and let it coast on low heat under a lid. The onions should retain their crispness but soften a little along with the cashews.Slice the sausage into coins and fry them in a separate pan on low to medium heat until they brown on each side. This happens quickly and easily so you only need a few minutes. Make sure not to overcook them.Combine the rice, onion mix, and sausages, then fry it for a few minutes, adding peanut oil as needed. Serve with a finishing salt. Delicious and so easy to make. Share
