Thai Inspired Noodles with Spicy Black Bean-Peanut Sauce.

This recipe looks fancy but it’s very easy to make. I wish I could take credit for inventing it, but it was my husband that came up with it.

You’ll need.
Linguine
Natural Smooth Peanut Butter
Black Beans
Tomato Sauce (optional)
Water

Spices
Red Thai Curry
Cumin
Mild Chili

While the linguine is boiling get a large frying pan and put a good amount of peanut butter in it. Add water and stir, you’ll need more water than you think, but add little by little so you don’t overdo it. You should have a creamy sauce, if it thickens, just add a little more water until it stays saucy. Add spices, the red Thai curry should dominate so use extra of that, stir then add the beans, don’t forget to rinse them first, stir again, then if you want, add a couple of tablespoons of tomato sauce. This is really just to make it look a little more appetizing. The sauce will be very beige otherwise.  

Just add a dollop.
Just a bit of red makes it look savory.


Drain pasta and pour your sauce over it and serve with sea salt. If you want to add more spice, drizzle with spicy olive oil. I use a homemade olive oil with crushed guindilla peppers that’s delicious. This too is courtesy of my husband.
