Indian Fusion with Seitan Mango and Vegan Feta
This dish came to me in a flash of genius yesterday, but adding mango was inspired by my husband Ben and my friend Naaja. Ben had seen a photo of a dish with Mango somewhere and Naaja told me that she loves Mangos with something spicy on top! She knew what she was talking about!
Vegan Feta Cheese
Shiitake Mushrooms (as a side)
Hot Indian Chili
Fry the seitan in peanut oil and spices until it’s browned, then add the chickpeas and spinach, continue frying until the spinach has shrunk and the chickpeas have a nice light brown color.
Fry the mushrooms separately with salt and pepper, they should be crispy but not hard. Once they start to crisp they harden easily, so keep a good eye on them.
Once that’s done, leave the mushrooms to the side.
Add sliced mango, vegan feta cheese and Coriander Chutney to your seitan chickpea mix, place in a bowl or on your plate and enjoy with your side of Shiitake Mushrooms.
