Not only are they delicious but they’re very rich in protein. If you use canned beans and chickpeas, rinse them thoroughly. Mash them until they’re a chunky paste, but not smooth liked mashed potatoes. Put them in a pot with a little water and let them come to a boil. While it boils, chop the onion and the cilantro and add to it the mix. When the onion has softened, add spices, stir, then add peanut butter, and stir again to make sure the peanut butter blends evenly. As you know I usually don’t use specific measurements, but here I think I should tell you that I added three heaping table spoons of peanut butter, and I used a whole can of black beans, and a whole can of chickpeas. Lastly add a handful of oats and blend well. You should have a thick paste now, but not so thick that you can’t stir in the oats. Let it sit for about 30 minutes, then form into patties and cook in a generous amount of peanut oil on medium to high heat. Season with sea salt and enjoy. Share
