Field Roast Chipotle Sausage Black Beans Spinach Avocado Olive oil Avocado or Peanut oil for frying Rinse the spinach and beans separately, steam cook spinach until the rinsing water evaporates, then add olive oil on low-medium heat. Cut sausages into coins and in a separate pan from the spinach, fry lightly on medium heat in peanut oil (any oil that can handle higher heat) until they’re slightly browned on each side. Make sure not to overcook them. Add the black beans and let them cook together for a few minutes. You can mix the spinach into the bean sausage mix or serve it on the side. Either way is tasty. Mash avocado and drizzle olive oil on top. I like to use spicy olive oil. I make my own oil by adding dried peppers to the bottle. The longer you let it sit, the spicier the oil. I leave mine in. Don’t forget to drink a vitamin c rich drink to absorb all the iron in this dish. Share
