Since I’m such a foodie you’d think I’ve been making my own pesto for years, right?
Made my first one last week.
Well as they say, better late than never!
Fresh Basil Leaves
Sharp Cheddar (Parmesan is traditional I know, but I didn’t have it at home so I made it with cheddar and it was really good.)
Use a mortar and pestle to grind up the pine nuts. Chop the basil leaves. I left mine kind of large and chunky, which I liked.
Crush a clove of garlic or two and sauté them until they’re just slightly browned.
Shred the cheddar on the finest setting. Pour every ingredient into a bowl then add a generous amount of olive oil and stir it. Pour over pasta and enjoy!
