Extra firm tofu
Peanut oil (for frying)
Slice the tofu block into thick rectangular pieces and fry on high in peanut oil.
While the tofu is in the pan, dice onion, garlic, and cilantro.
When the tofu is slightly crispy and browned turn off the heat and let the pan cool.
Then pour the onion, cilantro, and garlic mix over the fried tofu, drizzle lemon juice and olive oil over it, and let it sit under cover for a while to marinate.
It can be hard to wait so this is good to do right before you have a quick errand. 😊
By the way, Tofu Ceviche is amazing with a glass of chilled Pinot Grigio.
