I’m very excited because not only am I writing a new blog post with a new recipe. It’s a brand-new recipe for me too. I just thought of it last night and I was not disappointed. It’s delicious!
And easy, even if it looks amazing enough to serve at your next dinner party.
Large Sweet Potatoes
Spices, I used Jalapeno and Cumin
Bake the sweet potatoes in the micro-oven while you heat the regular oven to 350 F.
Mash the black beans a bit, you should have a chunky bean mush, not a smooth paste.
Add spices and tomato sauce and cook on the stove for a few minutes, stir thoroughly.
Cut the potatoes length wise, but not all the way through, open them, mash the inside slightly, add the beans and a piece of cheddar cheese, then place in the oven until the cheddar cheese have melted.
