I like to improvise and mix things up. I rarely cook the same exact thing again.
This time I added black beans and kale, both good sources of iron, and the beans are also a great source of protein.
I boiled up a pot of water, added chopped kale and let it boil for a few minutes to soften, then I added the tortellini and just as they were done I added the black beans so that they wouldn’t cool down the dish. That way the the cheese will melt with when added later.
Lastly I put everything on a plate (except for the water of course) added a couple of teaspoons of sun dried tomato pesto and some blue cheese on top.
It was delicious, but as I´m writing this I´m thinking that I should have added walnuts too. Definitely do that. Oh and dried cranberries! Why didn’t I think of that?
